One-Pot Egg Fried Rice with King Prawns

If you are looking for a quick and filling meal, this One-Pot Egg Fried Rice with King Prawns is the best choice. It is ready in 20 minutes and packed with protein and colourful vegetables. As the name suggests, you’ll only need one pot/pan for this recipe, which means less washing-up!

INGREDIENTS · 125g long grain rice · 1 small onion or a piece of leek, chopped · 1 carrot, diced · 10 king prawns · ½ red pepper, diced · 4-6 mushrooms, sliced · a small bunch of tenderstem broccoli, cut into larger pieces · ½ cup peas · ½ sweetcorn · salt, pepper, and chilli powder to taste · 2 tbsp sesame oil

· 2 eggs, slightly beaten


DIRECTIONS 1. Bring some water to the boil and cook the rice following the instructions on the packaging or use leftover rice. 2. Heat 1 tbsp sesame oil in a large wok or other non-stick frying pan and add the chopped onions. Fry for 2 min, then add the diced carrot, pepper, mushroom and broccoli and fry for 3-5 min, stirring regularly. 3. When the veggies are soft, it’s time to add the prawns, peas and sweetcorn. Fry for another few minutes. You can always add a splash of water if it looks dry. 4. Add the drained the rice, season with salt, pepper, and chilli and mix well together, then push everything to one side and add the other tbsp of sesame oil to the pan. 5. Pour the slightly beaten eggs onto the sesame oil and make scrambled eggs. When the eggs are cooked to your taste, mix everything together and serve hot.

Tip: You can use fresh chillies instead of the powder, but if you are not a fan of spicy food, feel free to leave it out altogether.

Tip: Prawns are a great source of protein and Vitamin-B, and they are low in calories. They are a nice addition of flavour and texture to this One-Pot Egg Fried Rice with King Prawns, however, the veggie version tastes great too, and you can always mix and match this recipe to what you have at home.
