Easy Homemade Paella

Do you ever feel like some foods are just too complicated to prepare that you give up without even trying? For me, paella has always been one of those meals but not anymore! I realised that it can be prepared easily at home in maximum 30 minutes, and without having to invest in a new paella pan adding more pans to my already full kitchen cupboard. This Easy Homemade Paella recipe is so simple and full of flavour! You just have to chop some ingredients, add them to the pan to cook and you will get a nice, warm, cosy and comforting meal in return without spending hours and hours in the kitchen. And this is from someone who really enjoys that! I lose myself in cooking and baking and often completely forget about time. But let's be real: there are days when I just simply don't have the time or the energy to prepare elaborate meals and that's OKAY. We all need a lazy day :)

INGREDIENTS · 1 whole chicken leg · 3 cooking chorizo sausages · 6 king prawns (without shell) · 250g paella rice · ½ yellow bell pepper · ½ celery stick · 1-inch leek · 1 cup peas · 600ml vegetable stock · a pinch of saffron (or you can use ½ tsp turmeric powder if you do not have saffron) · 2 tbsp chopped parsley

· 1 tbsp olive oil


DIRECTIONS 1. First prep your meat and veggies: Remove the skin and the bones of the chicken leg, then dice it. Slice the chorizo, chop the leek, celery, and pepper into small pieces. 2. Add the saffron to the vegetable stock and bring it to the boil. 3. Heat the olive oil in a deep, non-stick frying pan, then add the diced chicken, peppers, celery and leek and fry for about 2 minutes on high heat. Then add the chorizo and fry for another minute. 4. Stir in the rice and about half of the veggie stock. Stirring regularly, cook it for 10 minutes. Add the rest of the stock gradually to the paella, by pouring in small amounts when necessary. 5. Add the prawns and the peas and cook it for 5 more minutes. comments

6. Serve hot with fresh chopped parsley and lemon wedges.

Tip: If you are a seafood lover, feel free to add squid rings, mussels, or diced fish of your choice.
