It's a rainy day today, so it's a bit dark and gloomy outside, even though it's summer! So I thought, I will prepare something nourishing and healthy for breakfast that will bring a little sunshine :)

INGREDIENTS

· ½ cup rolled oats (heaped) · 300ml coconut milk · 100ml water · 20 blueberries · 4 strawberries · 1 kiwi · 2 tbsp peanut butter (or your favourite nut butter) · almond flakes · flax seeds · cocoa nibs · maple syrup or honey (optional)


DIRECTIONS 1. Put the oats, coconut milk and water in a pan. Cook for about 5 mins on low heat, stirring occasionally. 2. Meanwhile, wash the berries and peel the kiwi. Slice the strawberries and kiwi lengthways. 3. Divide the porridge between two bowls and top with the fruits and peanut butter, then sprinkle each bowl with almond flakes, flax seeds, and cocoa nibs. 4. Pour over some maple syrup or honey for extra sweetness. 5. Enjoy!

*The sprinkles used in this recipe can be substituted with other nuts and seeds.
