Avocado Devilled Eggs on Purple Sweet Potato Nests

In case you dyed too many eggs this Easter, or you're not sure what to do with hard-boiled eggs, here's a little inspiration on how to spice them up: Avocado Devilled Eggs on Purple Sweet Potato Nests. A quick and easy recipe that looks great and tastes great! The light, fluffy and spicy avocado cream-filled eggs complement the sweetness of the rosti and crunchiness of the asparagus. It is also perfect for a picnic, so just pop everything onto a sharing platter and enjoy it with your favourite people! 😊

Avocado Devilled Eggs on Purple Sweet Potato Nests


PREP TIME: 15 minutes

TOTAL TIME: 30-35 minutes

INGREDIENTS


Sweet potato nests:


- 1 medium sweet potato

- 1 egg

- 1 tbsp flour, heaped

- 1 tbsp chopped parsley

- ½ tsp chilli flakes

- ½ garlic powder

- salt & pepper

- coconut oil for frying


Devilled eggs:

- 4 eggs

- 1 small avocado

- 2-3 tbsp lemon juice

- salt & pepper

- 1 tbsp chopped parsley

- chilli flakes (optional)

DIRECTIONS


1. Place the eggs into a pan and cover with cold water, add a little salt, bring it to a boil and cook for 10 minutes. When ready, transfer the eggs into a bowl of cold/icy water and let them cool completely.

2. For the sweet potato nests, peel the sweet potato and grate it into a bowl, then add the egg, the flour and the seasonings and mix well together.

3. Heat 1 tsp of coconut oil in a frying pan. Turn the sweet potato into similar-sized, small patties and place them into the pan. Lower the heat and cook each 'patty' for about 10-12 min, covering with a lid and flipping them once halfway through.


4. For the devilled eggs, cut the eggs into two and remove the egg yolks. Finely grate the yolks into a small bowl, mash the avocado with a fork and add it to the bowl. Season with salt and pepper to taste, then mix in the lemon juice and the chopped parsley.


5. Fill the egg whites with the avocado mixture using a spoon or a piping bag as we did here. Sprinkle with chilli flakes if desired.


6. Serve the avocado devilled eggs on the top of the sweet potato nests with sautéed asparagus or any other greens of your choice.

Tip:If you are out of purple sweet potato, you can use any type of sweet potatoes or even potatoes for the nests.
