Sugar-Free Coconut and Banana Bread

If you are looking for a simple and healthy breakfast idea that you can make ahead the evening before, then try this Sugar-Free Coconut and Banana Bread. It is easy to make (you’ll only need one bowl, which means less washing-up), and it is delicious, naturally sweetened with ripe bananas and coconut flavours! I have been experimenting with banana bread recipes for some time now, tried to reduce the amount of added sugar and make a healthier version that tastes just as good, or even better than the 'traditional' one! You may have noticed from the recipes I've shared here that I am a huge coconut fan and I add it to recipes whenever I can! They didn't let me down once again. This Sugar-Free Coconut and Banana Bread is so moist and light that I just can't wait to make the next batch! 😊

Sugar-Free Coconut and Banana Bread

Prep time + rest: 5 + 10 min

Cooking time: 45 min

Total time: 1 hour

INGREDIENTS
 

 
· 2 large very ripe bananas, mashed
 

 
· 2 eggs
 

 
· 40g coconut oil
 

 
· 4 tbsp plain flour
 

 
· 2 tbsp coconut flour
 

 
· 1 tsp baking powder
 

 
· 1 tbsp lemon juice
 

· shredded coconut to sprinkle, but you can also add about 1/8 cup to the batter
 

 
DIRECTIONS
 

 
1. With a help of a hand mixer in a large bowl combine the eggs and the coconut oil.
 

 
2. Add the mashed banana, plain flour, coconut flour, baking powder and lemon juice to the bowl, mix it well and set aside for 10 min to rest.
 

 
3. Meanwhile, turn on the oven to 180°C/160°C fan/gas 4.
 

 
4. Line a loaf tin with parchment paper and pour in the mixture.
 

 
5. Place it in the hot oven and bake it for 45 – 50 minutes, until the top is golden brown, firm to touch and the inserted probe comes out clean.
 

 
6. Carefully take it out from the tin and leave it to cool on a rack.
 

 
7. Serve on its own or with peanut butter and fresh banana slices, a drizzle of honey or other toppings of your choice.

Tip: This Sugar-Free Coconut and Banana Bread recipe uses two large very ripe bananas only, but if you have more at home, you can always double up the recipe!

Tip: Spread some peanut butter on and sprinkle with sunflower seeds for a nutritious breakfast...
