Sugar-Free Coconut and Banana Bread
If you are looking for a simple and healthy breakfast idea that you can make ahead the evening before, then try this Sugar-Free Coconut and Banana Bread. It is easy to make (you’ll only need one bowl, which means less washing-up), and it is delicious, naturally sweetened with ripe bananas and coconut flavours! I have been experimenting with banana bread recipes for some time now, tried to reduce the amount of added sugar and make a healthier version that tastes just as good, or even better than the 'traditional' one! You may have noticed from the recipes I've shared here that I am a huge coconut fan and I add it to recipes whenever I can! They didn't let me down once again. This Sugar-Free Coconut and Banana Bread is so moist and light that I just can't wait to make the next batch! 😊

Line a loaf tin with parchment paper and pour in the mixture. 5. Place it in the hot oven and bake it for 45 – 50 minutes, until the top is golden brown, firm to touch and the inserted probe comes out clean. 6. Carefully take it out from the tin and leave it to cool on a rack. 7. Serve on its own or with peanut butter and fresh banana slices, a drizzle of honey or other toppings of your choice.

Tip: This Sugar-Free Coconut and Banana Bread recipe uses two large very ripe bananas only, but if you have more at home, you can always double up the recipe!

Tip: Spread some peanut butter on and sprinkle with sunflower seeds for a nutritious breakfast...

... or enjoy it with your favourite cup of tea... or coffee ☕
