Vegan Rum and Coconut Raw Balls

I love desserts with coconut... and rum... and nuts :) And I love baking, but sometimes I just want something quick, simple, and guilt-free. On those days, I remember the raw balls, or bliss balls, if you prefer, which have been introduced to me by one of my dear friends a few years back. And I am forever grateful to her for doing that :) I like to experiment with the different nuts I have in my pantry and see if I can create a new combo of taste and texture. And yes, this one for me (and my husband who tried it later) was an OMG moment! These Vegan Rum and Coconut Raw Balls are gluten-free and have no added sugar, just the naturally occurring ones from the dates. As a bonus, the nuts are full of nutrients and minerals to nourish your body. You only need a bite and you'll be hooked, I promise!

Vegan Rum and Coconut Raw Balls
Total time: 10 min prep + 30 min chilling time
Servings: 25 mini balls or 10-12 larger ones
INGREDIENTS · 50g raw cashews · 50g raw brazil nuts · 50g raw hazelnuts · 120g pitted dates · 1½ tbsp cocoa powder · 1 tbsp coconut oil · a few drops of rum essence/extract to taste, or a splash of dark rum if it is for adults only
· shredded coconut for tossing
DIRECTIONS 1. Blend the nuts in a food processor for about 1 minute. 2. Add the dates, cocoa powder, coconut oil, and rum essence and blend for a few more minutes. If the mixture seems too dry, add a little hot water. 3. When it is all well-combined, scrape the mixture into a bowl. 4. Scoop out a teaspoon of the mixture and using your hands, roll it into small, bite-size balls. If the mixture is too sticky, you can add a little bit of coconut oil in the palm of your hands before rolling the balls. 5. Roll the balls into the shredded coconut until evenly coated and place them on a tray or a plate and refrigerate for 30 min before serving. 6. Store these Vegan Rum and Coconut Raw Balls in an airtight container in the fridge for up to 5 days.

Tip: Have a couple of Vegan Rum and Coconut Raw Balls with a cup of your favourite coffee as a lush afternoon treat.

Tip: You can use a different selection of nuts if you don’t have the ones from the recipe at hand.
