If you are after a quick, easy and cheap snack idea that is healthy and wholesome, then give this Vegan Cauliflower Spread a try. My Mum used to prepare it when I was a kid and ever since it is one of my favourite to-go recipes. She makes it with normal mayonnaise and yoghurt, and this is the first time I made it completely vegan. It did work and it was a nice light dinner for us, but Mum's cauliflower spread always tasted better ❤️ Maybe there's some secret ingredient I don't know about? Or maybe it's just a pinch of love? 😊
Vegan Cauliflower Spread

Serves: 2
INGREDIENTS
- 260 gr cauliflower
- 2 tbsp chopped parsley
- 2 tbsp vegan mayonnaise
- 1 tbsp vegan yoghurt
- salt and pepper
DIRECTIONS
1. Bring a large pot of water to the boil with 1 tsp of salt.
2. Cut off 260g worth of cauliflower florets from a head of cauliflower and add them the boiling water. Cook the florets for about 5 minutes or until tender but not too soft.
3. Drain the blanched cauliflowers using a colander and cool them under running water.
4. Place the drained cauliflower florets on a chopping board, and mash them with a fork until you obtain a coarse texture.
5. Transfer the mashed cauliflower into a small bowl and add the chopped parsley and vegan mayonnaise, season with salt and pepper to taste and give it a good stir.
TIP
If you prefer a bit of heat you can add a pinch of crushed chilies and a touch of lime juice as well.
