Quick Oreo Cheesecake

I don't know about you but I constantly feel that I am running out of time and I never have enough time to do the things I want to do... While I am trying to adjust and tick off my to-dos, I came to realise that I need to be more efficient. I wanted to make a nice, creamy cake but I only had like half an hour to spare so I have improvised again. This Quick Oreo Cheesecake was born at that moment. It was easy as I knew I had some Philadelphia cream cheese in the fridge and a double pack of Oreos in the pantry. My husband is an Oreo fan and I thought that a cheesecake with Oreo biscuits would be a nice surprise for him! And it was. He loved it and said that having a bite of this cake was like biting into a cloud. Well, that's enough compliment for me, so here's the recipe if you like Oreos too! I'm sure you will love this Quick Oreo Cheesecake - it is so yummy, soft and creamy with a crunchy bottom layer and it is ready in less than 30 minutes.

INGREDIENTS Biscuit base: · 12 Oreo biscuits (crushed) · 30g coconut oil or unsalted butter (melted)


Cheesecake: · 200ml double cream · 340g Philadelphia cream cheese · 100g white chocolate

· 10 Oreo biscuits (crushed)


Decoration:

· 5-6 tbsp whipped double cream

· 6 Oreos


DIRECTIONS

Biscuit base: 1. Line a 20cm (8’’) round springform cake tin with parchment paper. 2. Combine the 12 crushed biscuits with the melted coconut oil and add it to the cake tin. Press the mixture onto the tin, until the bottom of the cake tin is evenly covered, then place it in the fridge. Cheesecake: 1. Melt the white chocolate and let it cool slightly. 2. Whip the double cream in a bowl until soft peaks form and set it aside. 3. Mix the white chocolate gradually into the cream cheese, then add the 10 crushed Oreos and give it a good stir. Gently fold in the whipped double cream, saving 5-6 spoonfuls for decoration. 4. Scoop the cheesecake mixture into the cake tin and even out the top and place into the fridge for at least 1 hour. 5. Once the cheesecake is set, decorate with the whipped cream and the Oreos to your preference.
