Oat and Chocolate Chip Cookies with Dried Fruit

The love between an Aunt and Niece knows no distance they say. But living in different countries is complicated. Different time zones, busy schedules, and thousands of miles need to be considered before we can even have a catch-up... So, I got this Oat and Chocolate Chip Cookies with Dried Fruit recipe from my Auntie, who is a great cook and bakes delicious cakes, too, and I think I've made these cookies a hundred times! Not only because they are sooo yummy, but also because they bring me a little bit closer to her regardless of the distance. We may not speak every day or sometimes for weeks, but the special bond is always there. If you read this, Auntie: I hope you know it 💗

INGREDIENTS · 1 egg · ½ cup brown sugar · 1 tsp vanilla extract · 2 tbsp butter · 1 cup flour

· ½ tsp bicarbonate of soda

· pinch of salt

· 1 tsp shredded ginger

· 1 tsp lemon zest

· 1 cup rolled oats · ½ cup dark chocolate chips

· 1 cup mixed dried fruit, chopped (you can use figs, apricots, raisins, cranberries, etc)


DIRECTIONS 1. Preheat the oven to 180C/160C fan/gas 4.

2. In a large bowl cream together the egg, brown sugar, butter, and vanilla extract until nice and fluffy.

3. Add the flour, bicarbonate of soda, salt, grated ginger, and lemon zest and mix until well-combined.

4. Finally, stir in the oats, chocolate chips, and dried fruit. This will require some patience and elbow grease as it will look like there’s not enough dough to incorporate all those oats, chocolate chips, and dried fruit. But keep on mixing and it will all come together. 5. Scoop out some dough and form a little ball with your hands – about the size of a walnut – then place it on a baking tray lined with parchment paper. 6. Pop the baking tray in the oven for about 8-10 min and bake until golden brown. Once ready, leave them to cool on a rack and store them in an airtight container.

These Oat and Chocolate Chip Cookies with Dried Fruit are the best-ever homemade cookies! They are crunchy, chewy, and full of flavour. You can snack on them, serve them with a lovely cup of tea or coffee, or have them for breakfast with yogurt and fresh fruit.

Tip: You can reduce the amount of brown sugar a little, but I found that it cannot really be replaced with sweeteners as the result won’t be the same. However, you can add more sugar and lemon zest (or even lime if you have it). I sometimes add nuts and seeds to the dried fruit mix for extra crunchiness.
