Homemade Morello Cherry Pie
If you are looking for a refreshing, delicious, and truly summery taste, then you must try this Homemade Morello Cherry Pie! The tartness of the morello cherries is in perfect harmony with the sweetness of the pastry but with way less sugar than in the store-bought pies. This pie looks big but I promise that there will be no crumbs left!

Homemade Morello Cherry Pie

Total time, including resting: 1 h 30 min
Servings: 8-10 slices
INGREDIENTS
For the pastry: · 225g plain flour · 125g margarine or soft butter · 3 ½ tbsp yogurt or milk · 1 ½ tbsp sugar · 1 small egg · zest from ½ lemon · ½ tsp baking powder · pinch of salt
For the filling: · 350g morello cherries, frozen · 3 tbsp sugar · 2 tbsp semolina · 1 ½ tbsp cornflour You will also need: · 24cm pie dish · 1 small egg for egg wash
· 1 tsp granulated sugar (optional)
DIRECTIONS 1. Sift the flour together with the baking powder and salt in a large bowl. Add all the ingredients: margarine, yogurt, sugar, egg, and lemon zest, then combine them into the flour mixture until a smooth dough forms. 2. If the pastry feels too wet, add some more flour. Place the dough in the fridge to rest for 30 min. 3. Preheat the oven to 180C/160C fan/gas 4.
4. Remove the dough from the fridge and divide it into two. Take the first ball dough and roll it out to 0.5cm (0.2in) thickness on a floured surface. Carefully, transfer the pastry onto the pie dish with the help of your rolling pin, then adjust it to the size of the dish. 5. Pierce little holes in the pastry with a fork, then sprinkle it with the semolina. Add the morello cherries, sprinkle them with sugar and cornflour. 6. Now move on to the second dough ball and repeat Step 4. 7. Pierce the top layer as well and brush it generously with the egg wash, and sprinkle with the granulated sugar if using. 8. Place the pie in the oven and bake for 45-50 min.
