Easy Cinnamon Apple Pancakes

The saying goes 'An apple a day keeps the doctor away', and I love apples! Not only are they delicious and nutritious, but have lots of health benefits: apples are good for your gut, for your stomach, and even for your brain! They are best consumed fresh, but I like to add them to desserts and pancakes, too. When I was little, my Mom used to make those thin, Hungarian pancakes (just like the French crêpes), and sometimes she stirred some shredded apples into the batter. I did not make these Easy Cinnamon Apple Pancakes as thin as she does them, but they are crispy and golden, and oh-so-cinnamony! Just what we all need on an autumn day :)

Easy Cinnamon Apple Pancakes

Servings: 15 pancakes
INGREDIENTS · 3 apples · 1 egg · 250g plain flour
· 200ml milk · 100ml sparkling water · 1 tbsp sugar · ½ tsp cinnamon · 1 tsp vanilla extract · pinch of salt · vegetable oil for frying
DIRECTIONS 1. Peel the apples, cut them into quarters, remove the stems, and then grate them. 2. Combine the dry ingredients, then add the egg, vanilla extract, milk, sparkling water, and mix until lump-free. 3. Stir in the grated apples. 4. Add a teaspoon of vegetable oil to a hot pan and lower the heat to medium. Scoop a few tablespoons of batter onto the pan and spread it evenly with the back of your spoon. 5. Cook each side until golden brown. 6. Serve as they are, or with maple syrup and a scoop of vanilla ice cream for added sweetness.
