Creamy Mushroom and Spinach Linguine (dairy-free)

This week feels like a long one for me. The UK went into the second lockdown last week, the clocks went back a good two weeks ago and the days are just getting shorter and darker, so I needed something to lift my spirits. A warm, cosy but nutritious meal. Something creamy but dairy-free (I can't really do cream right now), with lots of colourful veggies, and PASTA. So this Creamy Mushroom and Spinach Linguine (dairy-free) was born. I'm sure this is all you need on those busy weeknights, too. It’s creamy but light, full of flavour and texture, colourful and ready in 20 minutes! Need I say more? Oh yes: Buon appetito! 😊

INGREDIENTS · 200g linguine pasta · 1 cup chestnut or button mushrooms, sliced · 2 large handfuls of baby spinach · 1 small shallot, finely chopped · 2 cloves garlic, finely chopped · 4 slices of Pancetta or 2 slices of bacon, thinly sliced · a few sun-dried tomatoes, chopped · salt and pepper to taste · Alpro Single Soya or other plant-based creams · 1 heaped tsp cornflour · salt and pepper to taste · a few cherry tomatoes halved


DIRECTIONS 1. Bring a large pot of water to the boil with some salt and cook the pasta al dente. 2. In the meantime, place a large, non-stick frying pan on high heat, and then add the Pancetta together with the chopped shallot and garlic and fry for a few minutes until the Pancetta is cooked. 3. Stir in the mushrooms and sun-dried tomatoes and cook for 3-4 min, then add 2 ladles of the cooking water as well. Mix the soy cream with the cornflour and pour it into the pan. 4. Season with salt and pepper to taste, then add the cooked pasta and mix it into the sauce. Gently fold in the spinach and cook for another minute. 5. Serve in a pasta bowl and sprinkle over the cherry tomatoes.

Tip: Don’t have linguine at home? You can use spaghetti or tagliatelle instead.
