Cashew and Lime Raw Balls
Are you looking for a delicious but healthy snack that you can take with you on the go or enjoy as a midweek pick-me-up? Then look no further as these Cashew and Lime Raw Balls are a perfect choice! Both cashews and sunflower seeds are packed with antioxidants, vitamins and minerals and have numerous health benefits, including lowering cholesterol and high blood pressure. I prepared these Cashew and Lime Raw Balls with dates, so they are naturally sweetened and ready to give you an energy boost whenever you need it. And finally, the lime zest gives it all a fresh tangy citrus flavour and a fun green colour! 😃 💚

Cashew and Lime Raw Balls
PREP TIME: 10 minutes
TOTAL TIME: 40 minutes (including 30 minutes chilling)
SERVINGS: 14 balls
INGREDIENTS
- 100g raw cashews
- 50g raw sunflower seeds
- 1 tbsp chia seeds
- 100g dates
- zest from a lime
- 2 tbsp shredded coconut
- 1 tbsp coconut oil
- pinch of salt
DIRECTIONS
1. Blend the cashews, sunflower and chia seeds in a food processor/chopper for about 1 minute.
2. Add the dates, lime zest, shredded coconut, coconut oil and salt as well to the food processor, and blend for a few more minutes, until well-combined.
3. Shape and roll the mixture into walnut-size balls. If the mixture is sticky, add some coconut oil in the palm of your hands before rolling the balls.
4. Refrigerate for about 30 minutes before serving and store in an airtight container in the fridge for up to 5 days.

Tip: If you prefer, you can swap the sunflower seeds for pumpkin seeds. This would give these Cashew and Lime Raw Balls a greenish colour.
