Apple Strudel (vegan)

No autumn season is complete without a recipe which calls for some delicious and crisp apples. It doesn't matter if you bought them at the farmers' market or picked them at your nearest orchard (if you're lucky enough to live near one!); apples are the most popular fruit this season. I've been so looking forward to going apple picking at our nearest orchard last month but got covid, so I had to miss it. But luckily, I can still find a nice selection of apples at the farmers' market. For this recipe, I used up what I had in my pantry: a couple of Pink Lady and a few Royal Gala apples. Yet, the good thing with Apple Strudel is that you can use nearly any kind of apple, as long as it's still juicy and not too sweet.


This Apple Strudel is vegan, requires only a few ingredients, and it's ready in less than 1 hour. Have fun prepping and assembling it, and enjoy the smell of cinnamon and apples coming out of your oven!

Apple Strudel (vegan)


PREP TIME: 15min

TOTAL TIME: 45min

SERVINGS: 6 (2 strudels)


INGREDIENTS


- 6 sheets of filo pastry

- 6-7 medium apples

- 60g breadcrumbs

- 70g raisins

- 2 tbsp cinnamon sugar

- 1 tbsp lemon juice

- 50g margarine or vegan butter for brushing the pastry and for frying the breadcrumbs

DIRECTIONS


1. Start by frying the breadcrumbs to allow time to cool before using them in the recipe. Add a small amount of margarine to a frying pan, followed by the breadcrumbs. Fry the breadcrumbs on low heat for about 4-5min or until golden.


2. Peel, core and thinly slice the apples and add them to a bowl. Sprinkle with cinnamon sugar, lemon juice and raisins. Mix gently, making sure the apple slices are coated evenly. If the raisins are dry, soak them in hot water for a few minutes before mixing them with the apples.


3. Preheat the oven to 180C/160C fan/gas 4. Melt the rest of the margarine.


4. Lay one sheet of filo pastry onto a worktop and brush with melted margarine. Place the second layer over it, then repeat. Add the third sheet and sprinkle half of it with half of the golden breadcrumbs. Cover the breadcrumbs with half of the apple mixture, spreading it evenly. Fold the short end of the pastry over the filling and roll it up. Tuck the ends under the strudel and place it onto a baking tray lined with parchment paper/ silicone mat. Repeat with the rest of the ingredients.


5. Pop the apple strudels in the oven and bake for about 30min or until golden and crispy on top.
