Apple and Cinnamon Muffins
These Apple and Cinnamon Muffins are too easy not to make! The recipe requires everyday pantry ingredients, as well as apples that are currently in season. But of course, they are available all year round in diverse varieties. Well, there are thousands of types of apples in the world! They are not only delicious but also high in fibre, vitamins and minerals. Apples make an ideal healthy snack and can also be added to several dishes and desserts, such as these Apple and Cinnamon Muffins. These muffins are light and fluffy, buzzing with apple and cinnamon flavours that make them the perfect autumn dessert. Or breakfast 😁 Enjoy!

Apple and Cinnamon Muffins

SERVINGS: 12 muffins
INGREDIENTS
- 2 medium size apples
- 2 tbsp lemon juice
- 250g plain flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- a pinch of salt
- 130g brown sugar
- 130ml yoghurt
- 130ml veg oil
- 2 eggs
- almond flakes for decoration (optional)
DIRECTIONS
1. Preheat the oven to 200°C/ 180°C fan/ gas mark 6.
2. Line a muffin tray with paper cases or prepare 12 silicone muffin cases and set them aside.
3. Peel and core the apples, then grate them. Squeeze the lemon juice over the grated apple and set it aside. The lemon juice prevents oxidation. Therefore, the apples will not turn brown.
4. Add the dry ingredients to a medium bowl and mix well. Lightly beat the eggs and add them to the bowl along with the other wet ingredients.
5. Gently stir in the grated apple and divide the batter between the 12 muffin cases evenly. If using, sprinkle over the almond flakes and bake the muffins in the oven for about 20 minutes or until golden brown and firm to touch.
6. When the muffins are baked, pop them onto a rack and allow them to cool completely before enjoying.
