Vegan Quinoa Burrito

Are you looking for a quick and easy mid-week lunch/dinner or snack idea? Are you in a rush or too hungry to cook a sophisticated meal? (Yep, that's me. Most of the time! 😆) Then this delicious and wholesome Vegan Quinoa Burrito is for you. You can use any type of bean for the filling, add some diced cucumber or lettuce for extra crunchiness, substitute the quinoa for traditional rice filling, or make it meaty if that's what you prefer! I don't always chop the avocado up but prepare some guacamole for a luxuriously creamy filling. The choice is yours 😊

Vegan Quinoa Burrito

PREP TIME: 10 minutes

TOTAL TIME: 20 minutes

SERVINGS: 4 wraps

INGREDIENTS

- 4 tortilla wraps

- ½ cup quinoa

- 1 tin borlotti beans

- 1 avocado

- 1 small red bell pepper

- 2 spring onions

- 1 large tomato

- 2 tbsp chopped coriander

- 1 tbsp lemon juice

- salt, pepper, and chili flakes to taste

- vegan cheese (optional)

DIRECTIONS

1. Rinse the quinoa with cold water, then add it to a pot of boiling water. Cook for about 15 minutes and strain any excess water. Set aside.
 

2. In the meantime, chop the avocado, bell pepper, tomato and spring onions and add them to a large bowl, followed by the quinoa, chopped coriander, salt, pepper, chilli flakes, and lemon juice.
 

3. Pour the can of beans into a sieve and rinse well under running cold water and add them to the bowl as well.
 

4. Grate the cheese (if using) and mix it into the filling.
 

5. Warm one tortilla up at a time in a large pan on low heat, then scoop one-quarter of the filling onto each tortilla and roll them up into burritos.
