Spinach and Feta Crowns

It's the middle of the week again and I know that most of us don't have much time to bake when we have so many other important things on our to-do lists. You know me, I love baking from scratch, yet I find puff pastry a bit too complicated! So I bought a block of puff pastry and made these simple but delicious Spinach and Feta Crowns. If you only have half an hour this week to spare and want to bake something to nibble on, go for this one! 鉂わ笍

These Spinach and Feta Crowns are quick and easy to make, perfect when you want to munch on something but not spend hours prepping it. Tasty on their own, with fresh cherry tomatoes, or as an accompaniment to your favourite glass of white wine. Enjoy 馃

Spinach and Feta Crowns

Prep time: 15 min

Baking time: 15-20 min

Total time: 30-35 min

Servings: makes 16 crowns

INGREDIENTS

路 1 block puff pastry (500g)

路 1 cup wilted or cooked spinach (drained)

路 200 g feta or Greek-style cheese

路 a small bunch of fresh dill, chopped

路 freshly cracked black pepper

路 1 egg yolk

DIRECTIONS

1. Preheat the oven to 200 掳C/ 180 掳C fan/ gas 6.

2. Crumble the feta into a bowl, then add the spinach and the dill, season with black pepper to taste and mix it well.

3. Roll the puff pastry to 0.5cm (0.2 in) thickness, then cut it into 16 squares.

4. Scoop a little filling over each square, dividing the mixture evenly, then grab two opposite corners of a square and bring them towards the middle and pinch them together. Then do the same with the other two corners as well. Repeat with the rest.

5. Transfer the little parcels onto a baking tray lined with parchment paper and brush them with the egg yolk.

6. Pop the tray into the preheated oven and bake the Spinach and Feta Crowns for about 15-20 min. Once removed from the oven, transfer them onto a cooling rack for a few minutes. Enjoy hot or cold.

Tip: These Spinach and Feta Crowns are delicious on their own or with some fresh cherry tomatoes.
