Pan-fried Sea Bass with Toasted Almond Sauce

This Pan-fried Sea Bass with Toasted Almond Sauce looks like a sophisticated, restaurant-like dish, and it also tastes like one! The delicious new potatoes and the tender broccoli complement the flaky sea bass fillet with its crispy skin wonderfully, while the toasted almond sauce gives it all a luxurious touch. Pan-fried Sea Bass with Toasted Almond Sauce

PREP TIME: 15 minutes

TOTAL TIME: 30 minutes

INGREDIENTS

- 2 sea bass fillets

- 4 - 6 new potatoes

- 1 small broccoli

- 30g almond flakes

- 50ml cream

- 50ml white vine

- 3 tbsp olive or vegetable oil

- salt and pepper to taste

- lemon wedges

DIRECTIONS

1. Place the sea bass fillets on a plate, season with salt and pepper and set aside.
 

2. Put the new potatoes into a pot with cold water, bring to a boil and gently simmer until they are tender. It takes about 10 to 15 minutes.


 
3. Cut the broccoli into smaller florets and blanch them in boiling water for 4 minutes. Once cooked, drain and let them cool slightly.


 
4. In a large frying pan, heat a tablespoon of oil and saute the broccoli florets and the new potatoes on medium heat until they are lightly coloured. Remove from the pan and set aside.


 
5. Add another spoon of oil to the pan and place the sea bass fillets in with the skin side down. Fry the seabass until the skin is golden brown, then flip it to the other side and fry for another minute.


 
6. In a small saucepan, heat a teaspoon of oil, add the almond flakes and gently toast them until they are golden. Pour in the white wine and the cream, and boil it for a minute. Add salt and pepper to taste.


 
7. Plate the veggies and the sea bass fillet, serving with the almond sauce on the side or poured over the fish.
