Mango and Vanilla Overnight Oats

Overnight oats are my favourite breakfast during the week. Firstly, they are versatile – they work perfectly with all my favourite plant-based drinks and I can add just about any fruit to them; ready in a few minutes and can be prepared the night before which is great as I don’t have to worry about breakfast in the morning! These pots of Mango and Vanilla Overnight Oats remind me of a hot day on a tropical island: vibrant colours, exotic fruits and a great start to the day! ☀️

Mango and Vanilla Overnight Oats

Prep time: 5 min

Total time: 10 minutes + overnight chilling

Serves: 2

INGREDIENTS

- ¾ cup rolled oats
 
- 2 tbsp chia seeds
 
- ½ cup mango, chopped
 
- ¾ cup of coconut milk
 
- ¼ coconut yoghurt
 
- 2 tbsp maple syrup
 
- pinch of salt
 
- few drops of vanilla extract
 
- 2 tbsp shredded coconut
 

Decoration:

- shredded coconut

- 1 kiwi fruit, sliced

- mango pieces

DIRECTIONS

1. Place in a larger bowl the rolled oats, chia seeds, chopped mango, and the shredded coconut. Give it a good stir then add the coconut milk, coconut yoghurt, maple syrup, vanilla extract and a pinch of salt and mix it all together.

2. Spoon them into small jars, cover them and place in the fridge overnight.

3. In the morning decorate with kiwi fruit, mango pieces and shredded coconut.

Tip: These Mango and Vanilla Overnight Oats can be enjoyed as a healthy dessert.
