Dairy-free Fish Pie

Hello Friends, it's been a while. Well, a very long time since I've posted here, but I hope you are all doing good. 😊 A lot has happened since then. I started a new job, made plans for the new year and put those plans into action; we travelled home and spent two months there, then came back to the UK and planned trips and holidays; travelled some more, and it's already October! 🍂

Of course, this was only in a nutshell. But life has definitely been a rollercoaster of experiences and emotions. So much so that I haven't had the time to create new recipes or blog about them. I missed being here. I missed having this opportunity to write and tell a story. I missed coming up with recipes, making them, and then carefully setting up the table to take photos from every angle (making sure I got the right shot for you guys). But life has happened, and I am only hoping to be more consistent with posts here, in this little corner of the internet called Madelaine's Kitchen.👩‍🍳

I plan to post at least once a week. I hope I will manage to stick to it now that I've written it down! Though it would be lovely to share some simple, seasonal and healthy (healthier) recipes and meet you here once a week 🤍

Today's post is a nourishing, cosy and simple Dairy-free Fish Pie. I think it is a good one to make to greet this colder season that October brings along slowly. Head over to Instagram to check out my little viddy showing how to make it. Get cosy and enjoy! 🧦

Dairy-free Fish Pie

PREP TIME: 20 min

TOTAL TIME: 40-50 min

SERVINGS: 2


 

INGREDIENTS

- 500g potatoes

- 300g fish pie mix or your favourite fish diced

- a piece of leek or a small onion

- 2 cloves of garlic

- 100ml white wine

- 250ml Alpro Single Soy cream

- 1 tbsp dried dill

- 1 tbsp capers

- salt and pepper

* pie dish for 2
 

DIRECTIONS

1. Peel the potatoes, cut them into small cubes and boil them in salty water.

2. Finely chop the leek and the peeled garlic cloves. Add a splash of oil to a pan and add the chopped garlic and leek. Fry them until golden and soft, then pour in the wine and the soy cream. Mix in the dill and capers, season with salt and pepper, and bring it to a boil.

3. Add the fish, give it a stir and cover with a lid. Let it simmer for about 5 minutes or until the fish is cooked.

4. Preheat the oven to 220C/200C fan/gas 6.

5. Once cooked, strain the potatoes and mash them with a potato masher.

6. Transfer the fish stew into the pie dish, and scoop or pipe the mashed potato on top.

7. Pop it in the oven and bake for 15-20 min, or until golden. Enjoy with a side of blanched green beans or your favourite greens.
